Fall is finally in the air here in Arizona. That means we have temperatures in the 60’s in the morning while we still get up to the 80’s and 90’s during the day. It makes for some lovely running and cycling in the morning. This morning I decided to bring a little pumpkin into my life at breakfast. I have to do things like this because my husband is not a pumpkin fan. Bummer for him, eh? In any case, here’s the result. If you like pumpkin, I think you’ll love it.
- 1 cup of unsweetened vanilla coconut milk (you could use any milk of your choice, this is just what I saw first on the shelf)
- 1/2 cup of pumpkin puree (real puree . . . not that pie mix stuff that’s got sugar)
- 1/2 cup of plain nonfat Greek yogurt
- Dash of pumpkin pie spice (or however much your heart desires)
- A splash of vanilla
- 1 tablespoon of almond butter
- 1/2 a scoop of your favorite protein powder
- Ice
Pop it all in your blender and turn it on. Pour into a glass and enjoy!
