Sometimes packing lunches or having lunches for on-the-go can test your creativity without getting too boring, right? Well, I just recently had to do a cooking demo about fast, healthy and easy lunches for a bunch of folks who basically spend their whole day driving. This wrap fits the bill. The really cool part? Each wrap has 44 grams of carbs (9 of which are fiber) and 37 grams of protein. The avocado adds some healthy fat, too. A handheld, balanced meal for on-the-go. Enjoy!
- 1 whole wheat or multi-grain flour tortilla, 10 inch size
- 1 triangle of Laughing Cow garlic and herb cheese (but, hey, use whatever flavor makes you happy!)
- 1 large handful baby spinach leaves
- 3 ounces of low-sodium deli turkey or sliced turkey breast (Boar’s Head makes a nice one)
- 2 slices of provolone cheese
- 1/4 avocado, sliced
- 4 strips of red, orange or yellow bell pepper
Spread the tortilla with the Laughing Cow cheese.
Layer on the turkey, provolone, spinach, bell pepper strips and avocado slices.
Roll up. For extra staying power, I usually roll the wrap up in waxed paper, parchment paper or plastic wrap so it actually stays rolled up in your lunch. Actually, I wrap it in the paper even if I’m having it right after I make it because it stays together better.
